Name
At Thicker Than Water we have dubbed Blewitt Springs as the Goat Island of McLaren Vale as it shares the same 8sq km area and predominately sandy soil profile as that of Goat Island in Fiji. As you may be aware the G.O.A.T acronym stands for ‘Greatest Of All Time’ and we believe as far as Grenache is concerned that Blewitt Springs is proving to be just that!
Vineyard
This Blewitt Springs single vineyard stands tall at one of McLaren Vale’s highest elevations of 205 metres above sea level. Here the cooler temperatures relative to the main valley allow Grenache to attain ripe tannins without the over-ripeness of fruit. The ancient sandy soils have become synergistic with Grenache crating a delicate, expressive and balanced style.
Winery
The open fermenters for gentle cap management are important with this style of Grenache to ensure gentle extraction of tannin and colour. All hand-picked to ensure no damage to the vines the fruit is placed in fermenters as 100% whole bunch. This works great with this variety and allows another dimension of structure and flavour to the finished wine. This wine had the below 18-day skin contact program that has proven to create a stunning wine.
5-day cold soak <10 degrees (slow gentle extraction)
5-day wild ferment (native grape skin yeast begins ferment)
3-day (inoculated with cultured yeast to complete fermentation)
5-day extended maceration (refine texture, structure of tannins)
