Vineyard:
Single vineyard Pinot Noir from the Derwent Valley in Southern Tasmania. With sweeping views overlooking the mountain formation know as ‘Sleeping Beauty’ the vineyard sits at a 250m elevation allowing for greater sunlight to assist ripening and winds for drying out the fruit when needed. These Black Volcanic Rock soils found here are nutrient rich and fast draining, perfect for Pinot Noir.
Winery:
Hand-picked followed by whole berry fermentation (no stalks) to get the whole bunch benefits without the stalks. Open fermenter fermentation for gentle cap management and gentle extraction of tannin, colour and flavour. A 4-day cold soak before a 10-day wild yeast ferment.

Nose: A matrix of savoury, cherry cola, red liquorice all leaning into Sarsaparilla.
Palate: This is very much a savoury structural style here with cranberry fruits on the fore and a beautiful minerality. Soft velvety tannins and seamless acid line make for a great finish.
Cellaring potential: Drink now or up to 5 years.
