Hand-picked to allow a 100% Whole bunch pressing. Straight to Pressing for a gentle Press with great care not to over extract. Like a firm cuddle that doesn’t crush the sole. Goal- maintain the sole of the fruit, then guide it to greatness. 100% Wild yeast ferment this wine completed full malolactic fermentation with selected strain to minimise buttery characters. 14 months aging, 75% stainless steel 25% new, very tight grain French oak with Lees stirring along the way.
Winemaker: Campbell Greer.
Vintage: 2025
Variety: Chardonnay 100%
Maturation: 25% in 14 months new French Oak
Region: Kenton Valley, Adelaide Hills 100%
Alcohol: 13.5%
Colour: Pale Straw yellow
Nose: John Butler (Australian musician) says it best “Peaches & Cream to me”
While the 1.0 Version of this fruit’s ruby grapefruit character remains, it takes a back seat to the gorgeous and pronounced white peaches, infused with lemon curd and fragments of clove, all of which just make you want to jump in.
Palate: Textured, tight and refined the fruit harnesses the French oak beautifully. The creaminess joins the palate along with some slate like mineral characters to create a long, intriguing finish. Can’t wait to see this wine evolve.
Cellaring potential: Drink now or up to 5 years.
